Cottage Cheese Toast
Cottage cheese and sharp cheddar bake into a creamy, garlicky custard that an egg sets firmly onto hearty toast, broiled under Parmesan until the top is golden and crisp. Cut into squares and finished with a dollop of marinara, each bite plays bright, acidic tomato against salty, rich cheese.

Ingredients
- slices Dempster's Protein Bread (86g)
- egg
- cottage cheese
- shredded cheddar cheese
- grated Parmesan cheese
- garlic powder
- Pinch of salt
- Pinch of freshly ground black pepper
- (≈ 4 tbsp) marinara sauce
Instructions
- 1
Preheat the oven to 200°C and set a wire rack over a baking sheet.
- 2
In a small bowl, beat the egg, then stir in the cottage cheese, shredded cheddar, garlic powder, salt, and black pepper until well combined.
- 3
Divide the mixture between the 2 slices of bread, spreading it evenly and leaving a small border at the edges, then transfer the slices to the wire rack.
- 4
Sprinkle the grated Parmesan over the top.
- 5
Toast on the wire rack at 200°C for 12 minutes, so air circulates under the bread and the base crisps.
- 6
Broil for 2 minutes on high until golden and bubbly, watching closely so the Parmesan doesn't scorch.
- 7
Cut each slice into 6 squares and top each square with about 5ml of marinara sauce.
